New Coffees Are On Their Way

The harvest season has been long, but we’re beyond excited to invite you on our journey and see our partner’s grow! Building longstanding partnerships as a means to drive positive change in our homes & communities has always been a core value and goal for us.

With that in mind, we’re excited to announce that the wait is over! By the time you’re reading this, our first shipments will be on their way to the U.S. and Europe. So read on for a sneak peek at what to expect!

Our Coffees And Our Values

In case we haven’t had the pleasure to meet yet, welcome! At Cima, we specialize in sourcing Honduras´ most ethical and sustainable coffees by building direct, long-term relationships with people all along the coffee value chain. Together, we aim to create new standards for quality, traceability, and transparency to redefine what ¨specialty coffee¨ truly stands for.

We source our coffees from all 6 different regions throughout Honduras and only work with producers that are committed to quality and sustainability. Our partners lead efforts to produce their coffees in such a way that is respectful to the environment and all the people involved. With these values in mind, we have found exceptional coffees that vary in flavor profiles, varietals, and processes.

The regional diversity of our coffees allows us to have a variety of flavor profiles, ranging from dark chocolate and caramel to fruity and floral. We’re proud to be able to explore every corner of Honduras to share the amazing coffees of both up-and-coming producers, innovators, and Cup of Excellence veterans.

Finding these coffee gems is no easy feat, so we’re always happy to boast about our team & partners in Honduras. Needless to say, our partners all share the same values of quality, sustainability, and transparency.

Some of you might already recognize Nelson Dominguez, one of our collaborators and quality control partners!

Nelson has introduced us to many local producers in Marcala, and we're always impressed by his ability to identify amazing coffees from the region and build a community around them!

Thanks to him, we'll have a few new offerings to share with you in the coming weeks; and thanks to our export partners in Honduras, we are able to share the essence of every single coffee with you!

COMSA

Let’s take a quick trip to Marcala, so we can introduce you to COMSA, one of our export partners! We are proud to work alongside them to share some of Honduras' best coffees with the world and support their initiatives to improve coffee quality and community standards through education!

COMSA has built a local school that follows the philosophy of Glenn Doman and developed to help children with brain trauma injuries to catch up and learn and be normal kids. Rodolfo Peñalba has evolved the idea to take it from injured children to non-injured children. We are grateful for the opportunity to directly support this type of work.

The results are kids with incredible emotional and intellectual capacity. Every aspect of this initiative has been through coffee, so they align perfectly with our values and are a true testament to the impact we can achieve in our local communities through sustainable and ethical practices in our industry.

COCAFELOL

As part of our efforts to build long-term partnerships across our value chain, we have also partnered up with Ocotepeque-based COCAFELOL. Having an export partner in Ocotepeque and another one in Marcala allows us to maintain full transparency and traceability.

Come July, we’ll be visiting them to prepare our upcoming shipment featuring some of our client’s favorite coffees!

So What Can You Expect?

Part of the reason behind our frequent & prolonged stays in Honduras is so we can nurture our relationships with our long-standing partners, but also so we give ourselves enough time to meet new people along the way. You wouldn’t believe how many surprises we have encountered at the cupping table throughout the months we traveled the country.

Yes, we will obviously continue to bring our client-favorite offerings, those consistent, yet versatile specialty coffees that serve as any roastery or coffee shop’s staple offering, but expect to be surprised by a few new faces and coffees in the months to come.
